The List
In no particular order. Once a month we go out and hit as many as 20 tasting rooms in a day, running through the flights and hedging on the other stuff that might be stashed under the counter, or not on the tasting list, or what their club members get. Those wines that stand out get purchased and of those they are tested with suitable dishes to bring out the subtleties. Others may be left to breathe for a number of days to monitor longevity while some may need to have a second bottle opened because the first went too quickly. If a fight breaks out over the last sips in the glass then bells are tolled 'til dawn and a mock virgin sacrifice will be performed at sunrise. There now you have an insight into tasting criteria.
